Essay

The object of investigation: the techno-chemical control of raw materials and finished commodity of the fat-and-oil production. Aim of work: scientific substantiation and improvement of control methods parameters of the safety, natural antioxidant and preservative in fat-and-oil production technology. Techniques of investigation: standard techniques; chromatographic methods; immunoenzymatic assay; capillary electrophoresis; mathematical methods using programm software Galaxie, Agilent Technologies Chemstation, Microsoft Office Excel. Theoretical and practical results, novelty in science: the techniques of safety indicators measuring have been developed, namely pesticides, polyaromatic hydrocarbons, synthetic preservatives as well as antioxidants in vegetable oils, fat-and-oil products and oilseeds. There has been developed the method of internal accuracy control of safety indicators results which practical using has proved its efficiency. For the first time in Ukraine extracts of oilseeds matrixes, oils, fats and oil products have been adapted to test systems dealing with determination of synthetic pyrethroids, sym-triazines and phenoxy-acetic acid derivatives in aqueous systems. The method for qualitative and quantitative determination of synthetic pyrethroids, sym-triazines and phenoxy-acetic acid derivatives under their simultaneous presence in seed, oils and oil products has been developed by immunoenzymatic assay. Test systems have been validated by the method developed. As a result, the new data of determination and optimization parameters of pesticides and preservatives separation by GC, CZE, HPLC and ELISA methods have been obtained. Kinetics of tocopherol spending in vegetable oils obtained by different technological processes has been determined while storing. The practical value of investigation has been proved by development of normative documentation - government standard of Ukraine 4689:2006 "Foodstuffs. The determination methods of benzo[a]pyrenes mass content". Level of approbation: the results of the work given have been introduced into technochemical control of fatty production in Сlose Сorporation "Zaporozhsky fat-and-oil combine" and are used in educational process of the Dept. "Technology of Meat, Meat and Fat-and-Oil Products" National University of Food Technologies during preparing the students of the speciality 7.0091705 "Technology of fats and fat substitutes". The point of usage: oil-fat and foodstuff industry.
