The dissertation is devoted to creating new high-performance equipment to increase output in wine grape must, intensive mixing of liquid flow, homogenisation of fermentation medium, limitation of specific material and energy losses and increase the quality of products, and to developing mathematical models of these processes. The object of research is the hydrodynamic and mass-transfer process concerning flow mixing and fermentation technologies. Keywords: mass interchange, mixing, barbotage, sedimentation, fluid dynamics, homogenisation, champagnisation, rehydratation.
