Kosyak O. Forming of mushrooms market and products of their processing in Ukraine

In the dissertation theoretical, methodological states of forming and development of industrial mushroom sector in Ukraine are summarized and practical states are worked out. Theoretical basis of mushroom market functioning is summarized; tendency of development of the world and international markets of mushrooms and their products is analyzed. The scientific work contains the characteristic of the contemporary state and development of Ukrainian mushroom branch and evaluation of demand for mushroom production of Kiev region consumers, the factors which influence forming of the demand are determined. On the basis of gathered information and its analysis, predictive estimate of mushrooms and compost production volume is made and conception of Ukrainian mushroom branch development as alternative source of rich in proteins foodstuffs for the national grocery markets is offered. Regulative governmental actions to assist Ukrainian mushroom branch development are determined and argued.
