Object - methods processes of structural transformations in the baking business. Purpose - is to develop methodological tools for prioritization of structural transformation baking enterprises. Research methods - statistical, logical, comparative, economic-mathematical modeling and comparative structural analysis, analytical and prognostic. Theoretical and practical results - the development of theoretical and methodological principles of forming a system of priorities for structural transformation of baking industry enterprises. The novelty of results - theoretical basis and practical solution of scientific tasks for prioritization of structural transformation baking enterprises.
