Object - methods processes of structural transformations in the baking business. Purpose - is to develop methodological tools for prioritization of structural transformation baking enterprises. Research methods - statistical, logical, comparative, economic-mathematical modeling and comparative structural analysis, analytical and prognostic. Theoretical and practical results - the development of theoretical and methodological principles of forming a system of priorities for structural transformation of baking industry enterprises. The novelty of results - theoretical basis and practical solution of scientific tasks for prioritization of structural transformation baking enterprises. The degree of implementation - the "Odessa loaf" (certificate № 02/707 of 8.12.10), "Belgorod-Dniester loaf" (certificate № 02/895 of 25.12.10), "Kotovsky bakery" (reference number 02 / 44 of 05.25.11), in a scientific and educational process Odessa National Academy of Food Technologies (implementation act № 124/70 of 14.04.2011).
