Essay

Dissertation is devoted to learning about influence of residual amounts of disinfectant and detergent-disinfectants on indicators of safety and quality of milk. It is shown that the residual amount of disinfectant and detergent-disinfectants in milk and the production equipment does not cause changes in organoleptic, physico-chemical parameters and technological properties of milk, but exhibit cytotoxic effects on the culture of human cells of different histogenesis. The impact of low concentrations of certain disinfectants and cleaning-disinfection on the activity of microorganisms fermenting preparations for the manufacture of cultured milk products (bacterial concentrate for fermented baked milk and CI-1 for the manufacture of yoghurt was established). The results on the development of methodology for determining the residual quantities of disinfectants on surfaces of technological equipment of production enterprises and processing and transporting food and milk, which are based on the determination of cytotoxic effects of washed samples of milk on cell cultures.
