The thesis is devoted to the influence of different methods of toilet carcass on the quality of beef, a study of the cytotoxicity of tap chlorinated water, to develop new approaches to sampling with carcass for microbiological studies. According to studies, the method of toilet carcasses used in the final stage of processing cattle, affects the meat quality and its shelf life. Only the carcasses of cattle that were processed after dry toilet with live steam are consistent with the requirements of fresh meat and persisted throughout the study term (14 days). It is established that tap water is chlorinated, which is used for wet toilet carcass has a greater toxicity for Tetrahimena pyriformis, as well as to cultures of human cells of different histogenesis (20,16±2,9 %). After intensive aeration of this water for 3 hours or settling for 24 hours for the cytotoxicity of ciliates is not detected and reduced by 25 % for the cells of renal origin, and by 10-20 % - lung and skin. The results of microbiological testing of beef to use non-destructive and destructive sampling has virtually no effect. The optimal sampling sites in bovine carcasses for microbiological studies are desperate place, breast, groin and sirloin , because they represent areas with high levels of contamination.
