Essay

Dissertation is devoted to improved veterinary and sanitary control of production of raw commercial milk for microbiological and parasitological criterias. It is proved that the main sources of contamination of milk of psychrotroph are milking and dairy eguipment, the skin of cows, water, food, bedding at al. During experiments it has been established that аccording to bacterial semination by all groups microorganisms, mixed milk from small holdings is the most risky. It is established that the dominant psychrotroph are bacteria of the genus Pseudomonas (47,12 %). The critical limit the duration of storage of non-refrigerated milk is scientifically based. It's <2 hours. The critical storage limit of cooled milk is <12 hours. Method of parasitological stadies of milk is improved. It has been found experimentally that parasites in milk can support vital activity at the storage temperature 6 and 37 ?С, but at the temperature of 23 ?С they can grow. The critical control point when eggs of investigated parasites destructing during pasteurization of raw milk is determined. It’s critical boundary is 75 ?С with standing 20 seconds. It has been recommended to test milk not only for bacterial semination and also for parasitic contamination. “Method recommendations on the production of raw commercial milk of proper quality” are formulated.
