This dissertation is dedicated to scientific substantiation of expedience of buckwheat kernels processing by use of electromagnetic field of super-high-frequency (EMF SHF) and development of 'light' buckwheat kernels production technology. The changes in chemical composition of buckwheat kernel after processing by EMF SHF have been ascertained in this thesis. The possibility and expediency of 'light' buckwheat kernels production by use of EMF SHF have been identified for the first time. The influence of EMF SHF power on temperature increase of buckwheat kernel has been examined. It has been proved that not only temperature influences the quality of 'light' buckwheat kernels, but the intensity of its rise as well. The value of buckwheat kernel's drying while production of 'light' buckwheat kernels has been found experimentally. Investigation results confirm the dependence of output and quality of 'light' buckwheat kernels on kernel's moisture and damping time; on preliminary preparation of kernels; on buckwheat kernels fineness. The storage period for 'light' buckwheat kernels has been estimated taking into consideration different temperature modes. It has been proved that EMF SHF can cause sterilizing effect by chosen treatment modes. The production technology of 'light' buckwheat kernels has been scientifically justified and developed in this thesis. The expected economical effect of 'light' buckwheat kernels production has been calculated. Key words: EMF SHF, 'light' buckwheat kernels, SHF-processing, technology
