Essay

Thesis deals with forming of the product portfolio of the meat processing industry. Theoretical approaches to the definition of concepts such as organic production, organic products, food supplements and health food, are summarized. Classification of types of modern food staff is improved and authors terms of different types of modern food staffs, are offered, including those based on the possibility of using different food supplements. The key factors that influence on the formation of the product portfolio, are defined. The modern state of the market of meat and meat products in Ukraine, is investigated. The sequence of actions to optimize product portfolio using cluster analysis and expediency of changing the structure by introducing a range of organic products, is worked out. Creation of evolutionary models of the product portfolio structure, is offered and the algorithm of structure of product portfolio forming, is built, including cyclic changes of phases evolution and structure optimization of the product portfolio using cluster analysis. The identification of the product portfolios of different meat processing manufactures in the form of dendrites, is conducted.
