Dissertation is devoted to the decision of question of development requirements to the quality of technological water for preparation of tea drinks in HoReCa, and technology of water treatment that will allow to keep the maximally possible amount of useful substances of tea for man's organism and will provide the high organoleptic indexes of tea drinks.
