The thesis is devoted to the development of theoretical, methodological, organizational, and practical principles of strategic management of products quality at the baking enterprises. In thesis the theoretic fundamentals of strategie management of products quality at the enterprises are considered and the necessity of study of the strategic quality management system at the home and foreign enterprises is proved. The author's approach to the definition of under standing of ''products quality'' essence, ''quality efficiency'', ''strategic management of products quality at baking enterprises'' is given.As a result of generalization of existing approaches for the functions of strategic management of products quality, the market analyses and purpose arrangement is added to the composition of their functions.The marketing problems of the baking industry market in Ukraine and the main problems under the conditions of economical crisis are analyzed.Тhe present state of development of the strategic products quality management along with the volumes of sold products and the quality management system at the ehterprises are investigated.With the purpose of raising the effectiveness of strategic quality management, the factors influencing the quality of bread products at all stages of their life cycle are analyzed. Taking into account the importance of process of quality analysis, the approach to its assessment is proposed. It includes organoleptic, aesthetic characteristics on basis of which the graphic i mage of quality of produced bread products is built. To solve the problem of strategic quality management, the complex of propositions for the improvement of quality management was offered. This complex should provide the production of high quality products at the baking enterprises, including the complex assessment of raw material delivery and multilevel products quality control. The main ways of raising the strategic products quality management which influence the enterprise incomes and profits and the production of high quality products and their constant improvement were considered.Taking into account the foreign experience, the proposed economical strategies will influence the quality of products: the products will be much in demand, the profit will increase, the enterprises will be competitive and able to take the worthy place in the market and will get the exit to the international markets.
