The dissertation is devoted to scientific substantiation and development of the technology for semi-finished desserts on the basis of semi-skimmed milk with the regulated composition of saline system. Based on theoretical and experimental researches on the specification of the parameters for regulating the composition of saline system of semi-skimmed milk by means of complexing agent sodium alginate, the technology of getting semi-skimmed milk with high thermal and acid persistence is substantiated. On the grounds of the defined scientific principles on regulating the composition of saline system of semi-skimmed milk, the technology of semi-finished desserts is developed. Physical-chemical, structural-mechanical, organoleptic, microbiological and toxic indexes are investigated in complex; nutritive and biological value of the developed products is estimated, the conditions and storage terms are substantiated, the ways of using the developed product are determined. Normative and technical documentation is worked out and approved; new technologies are introduced to the branch enterprises, economic effect of which is calculated.
