The dissertation thesis is devoted to development of production technology of fungal inulinase. Two new fungal strains-producers of inulinase Penicillium aculeatum 225 and Aspergillus sp. 8TХ were selected as a result of screening. Cultural, morphological, physiological and biochemical properties of selected strains were studied. Сrude enzyme preparation from P. aculeatum 225 showed the activity of 72,2 U/ml (specific activity was 6,07 U/mg) and one from Aspergillus sp. 8TX showed the activity of 64,9 U/ml (specific activity was 4,87 U/mg). The technological and equipment scheme of production of hydrolytic enzymatic preparation inulinase was developed. Bench tests of P. aculeatum 225 cultivation in semi industrial conditions were carried out and optimal conditions of it were established.
