Essay

Object of study: technology fractionation fats. The purpose of the study: scientific rationale and development of technology for special-purpose fats from oil of new lines of sunflower for use in food and oil and fat technology. Research methods: titrimetrically and gas-liquid chromatography; planning of experiments and experimental data processing was applied mathematical methods using the software package Microsoft Excel, Mathcad. Theoretical and practical results: it was determined process conditions for fractionation sunflower oil saturated type different methods (from the melt, using initiator crystallization, solvent); developed appropriate technology and technological scheme of fractional crystallization; mathematical models that can predict the yield, melting point fraction of a special fat and manage the process of fractionation; estimated physical-chemical, structural and technological parameters of the obtained fractions, which served as the basis for testing fat for special purposes as the fat component bakery products; developed the project of normative documentation on sunflower palmitin. Novelty: theoretically and experimentally the possibility of obtaining oil from new lines of sunflower special fats. Degree of implementation: developed the project of normative-technical documentation for a new product type - palmitin sunflower - TU U 10.4 - 02071180 - 001 : 2013 and implemented in the educational process of students majoring 7.05170102 - "Technology of fats and fat substitutes". Application area: food industry.
