Essay

The object of the study: the technology of deep sunflower seeds processing with ethyl alcohol. The objective: to develop theoretical foundations and practical recommendations regarding the technology of sunflower oil extraction with ethyl alcohol by step-by-step percolation. Methods: titrimetry, spectrophotometry; for design of experiments and experimental data analysis the mathematical methods and software from Microsoft and Statsoft were used. Theoretical and practical results: the technological conditions for extraction of sunflower oil with simultaneous obtaining hull-free food-grade meal have been defined; the technological scheme of sunflower oil extraction with ethyl alcohol, taking into account economic feasibility, was developed; the model for predicting of residual oil content in the meal was obtained; chemical and physico-chemical parameters of miscella, sunflower meal and oil have been determined; the laboratory technique for evaluation of the suitability of materials for oil extraction was proposed; laboratory technique to study the oil extraction with step-by-step percolation was improved. Novelty: the mathematical model of the process of oil extraction from sunflower flakes with ethyl alcohol was obtained; the functions that demonstrate the impact of the parameters on the dynamics of oil extraction and non-oil substances of cake have been obtained; the model of sunflower oil solubility depending on the temperature and concentration of the alcohol at low temperatures was obtained; the distribution of water between the oil-bearing material and miscella during extraction has been determined; the moisture content of raw materials needed to prevent flooding of the extractant was found; the regularities of sunflower seed kernels microwave drying have been obtained. Stage of promotion: results of the investigations have been used in the educational process at the Department of Technology of Fats and Fermentation Products of the NTU "KhPI" (for specialty 7.05170102) and at the Ukrainian Research Institute of Oils and Fats of NAAN for designing of pilot plant for oil extraction with ethyl alcohol. Sector of use: food industry.
