The thesis is devoted to the modes justification of wheat grain processing by ozone-air mixtures to improve sanitary conditions and technological properties of the grain and to increase the efficiency of post-harvest grain handling. On the basis of theoretical and experimental studies scientifically proved the expediency and effectiveness of the use of ozone technologies for processing and storage of wheat grain that can improve the quality and safety of grain and increase the duration of its storage.
