Essay

Dissertation focuses on the scientific substantiation and improvement of production technologies of cereal-based dishes and culinary products with balanced nutrient composition. It is established that mathematical modeling of recipe compositions allows to produce multicomponent instant porridges and grain casseroles with balanced composition of proteins and carbohydrates and liquid seasonings which correct fat content in the products. The improvement of complex quality value of instant porridges and grain casseroles is established.
