Essay

The object of research is the technology of removing wax and wax-like substances from oil. The purpose of research - scientific substantiation of technological methods of an intensification of the crystallization and filtration stages during freezing oil. Methods: study of physico-chemical and organoleptic qualities of sunflower oil was carried out according to standard procedures; electrophysical characteristics of sunflower oil suspensions, waxy substance was determined by measuring the dielectric constant and conductivity; and a wax content of wax-like substances in the sunflower oil - photometric method and high-temperature gas-liquid chromatography. Theoretical and practical results: developed advanced technology of freezing of sunflower oil, a construction of the filter device to remove wax and wax-like substances of vegetable oil. The technological instruction. Scientific novelty first time the usefulness of crystallization reasonably sunflower oil by cooling and intensive treatment in an electromagnetic field applied to the use of fibrous filter materials polysulfone-based use of which increases the shelf life of sunflower oil; found possible polarization slurry of wax and wax-like substances in the sunflower oil based on the electrical characteristics of the suspension, in particular the permittivity and conductivity; first obtained wax-like substances that have a high melting point, do not require further purification and can be used as a standalone commercial product; scientifically proven technology solution improved technology freeze of sunflower oil. Degree of implementation: results of the thesis are used in the educational process of the department of technology of fats and fermentation products NTU "KPI". Тesting of the technology, and the freezing of the filter device is made jointly with Limited Responsibility engineering company "FT" Sunflower "(Kharkiv). The point of usage: oil-fat and food-stuff industry.
