Essay

Object of study: the formation, use and development of production capacities bakeries. Objective: synthesis of theoretical and methodological provisions formation and efficiency of production facilities, bakeries and develop practical recommendations on the directions of development. Methods: monographic, historical, abstract logical analysis and synthesis, comparison, series, graphic, settlement and constructive, Economics and Statistics. Scientific novelty: the first methodologically grounded strategic lines of bakeries; improved definition of production capacity, methodical approach to determine the level of efficiency of production facilities and bakeries appropriate algorithm for analysis, organizational and economic model creation and operation of small bakeries; received further directions of state regulation of the production of social kinds of bread, the rationale for the creation of mini-bakeries, development of investment projects on modernization, technical re-equipment of existing bakeries, creating a mini-bakery producing social kinds of bread and frozen bakery preparations.
