Essay

Object is catalytic interesterification technology of oils and fats. The aim is improving of the catalytic interesterification technology of fat through the development and implementation of new catalysts based on alkali metals glycerates. During the execution theoretical and experimental methods used. Fatty acid and triacylglycerol composition of vegetable oils identified using gas chromatograph Hewlett Packard HP-6890; melting and crystallization characteristics and content of hard triacylglycerols of researched oils determined by differential scanning calorimeter Q20; processing of data obtained using with differential scanning calorimetry, performed with the help of software package TA Universal Analysis; organoleptic and physico-chemical properties of oils determined by standard methods; planning experiments and experimental data processing applied with mathematical methods using software packages MathCad and Microsoft Excel. Scientific novelty: a working hypothesis of the possibility of creating a new interesterification catalyst based on alkali metal glycerates experimentally confirmed; more subordination of interesterified fat in the presence of new catalyst (potassium glycerate) to statistical distribution of fatty acids in triacylglycerols in comparison with conventional catalyst (sodium methoxide) found; the dependence of interesterification degree on temperature, interesterification duration and concentration of new catalyst found experimentally and by simulation approximating; scientific data on the impact of physical and chemical characteristics of fatty materials (acid value, moisture content and volatile matter) in the catalytic activity of the new catalyst obtained; the dependence of the activity of the new interesterification catalyst (potassium glycerate) of shelf life compared with conventional catalyst (sodium methoxide) established.
