This thesis is devoted to improving the veterinary and sanitary control of the unskimmed cow’s milk and cultured milk products, received for sale on the agri-food markets, using the microbiological criteria. The first time scientifically substantiated and experimentally determined referring to the content of the bacteria of the genus Enterococcus in it. It is studied that S. aureus var. hominis and S. aureus var. bovis from them produce the enterotoxin of А type. The microbiological safety criteria and the methodology of controlling the sour cream and unskimmed cow milk, received for sale on the agri-food markets, referring to the content of the coagulase-positive staphylococci have been developed.
