This thesis is devoted to improving the veterinary and sanitary control of the safety and quality of meat of slaughtered animals, received for sale on the agri-food markets. According to the HACCP the Critical control points in the primary disassembly of carcasses, their storage and transportation was scientifically substantiated. A toxic and biological method for determining the total toxicity of meat and the content of antibiotics therein with the help of the test facility for infusoria Colpoda steinii has been developed . The proposed method for diagnosis of cysticercosis in bovine and porcine animals has a reliability of 99.5%.
