Essay

In the manuscript above we considered the essence and components of the food market and the market place for each bakery product in depth theoretical approaches with it’s definition of category and harmonized conceptual apparatus. The combination of market and state regulatory instruments was substantiated, also some proposals were provided in aim to improve the current state legislation. In the framework of our research, we analyzed demand and supply, capacity of bakery products market, as well as the structure of bread products market operators, and the components of infrastructure. The structure of bread products market and its operators were determined. The main components of the market infrastructure were investigated, covering the competitive environment in the market and price situation. The competitiveness of bakery products industrial production using the rating estimation method was determined in the research done.
