Essay

The dissertation is devoted to the theoretical underpinning and the development of methodical recommendations on hotel and restaurant business management in Ukraine. The modern mechanism hotel and restaurant business management was explored, the main concepts were highlighted and the significant influence of hotel and restaurant business on the tourism industry and on the development of the national economy was revealed. The main provisions of the state strategy of tourism development management, which is an integral part of the state regulation of the Ukrainian economy, are determined. The necessity of defining the hotel and restaurant business as a perspective direction of activity functioning as a driving mechanism in the field of hospitality and having a significant economic and social influence on the development of the country is substantiated. The current state and trends of hotel and restaurant industry development in Ukraine and in the world were analyzed. Foreign experience of management is considered, namely, the conceptual foundation of tourist hotel-restaurant cluster formation and the advantages of the tourism industry development and the economic and social value of the cluster. The organizational-economic mechanism of hotel and restaurant business management is investigated and its conceptual provisions are formulated. The methodical tools for determining the integral index of the influence of socio-economic factors on the hotel and restaurant business as a component of the national economy, taking into account four types of potential: economic, personnel and resource, tourist-recreational and informational, are proposed. The proposed methodological approach enabled investigation and identification of the negative trends that hinder the economic development of tourism, as well as hotel and restaurant business.
