Dissertation containing the results of experimental researches of biotechnological ways of lactofermentation of vegetable juices mixed with country-cheese whey and objective laws of their intensification by means of selective immobilisation on insoluble polysaccharide substrates are presented.The technology of combined lactofermented products based on theory of adequate nutrition and usage of raw Omaterials and energy-saving concepts, allowing to increase its efficiency was worked out.Novel technologies are applied in industrial scale.
