The research is devoted to studying of genotypical peculiarities of quality indicators and amino acid composition in the long spinal muscle tissue of universal white breeds, specialized meat breeds, ukrainian and Poltava meat and fat breeds and in Ukrainian steppe fat dappled breed as well. Industrial technology of pork production had been taken into concideration. Ukrainian meat breeds and large white breeds are proved to obtain the highest reproductive quality indicators. Changeability of quality indicators and amino acid composition in the long spinal muscle tissue depends from the genotype and productivity.
