The thesis is dedicated to problems of development of a process engineering of combined meat products with increased food and biological value for a mass medical-preventive feed and evaluation of their quality. The formulate scientific foundations structure formation between principal components of source material. There are studied the basic interactions which happen between biopolymers of the meat-vegetative system under effect of forming and culinary treatment. There is studied the effect of concentration of a meat on structural-mechanical properties of samples, organoleptic and consumer properties of finished products, their food and biological value. The modifications of basic indexes of quality are established during storage of finished products and periods of their storage are defined. The production technology of molded meat-vegetative semi-finished products, the optimum parameters of the technological process are established and also compoundings of offered products are calculated.
