In this scientific paper, an effective approach to choosing the operation temperature of cryoinstruments for the minimum destruction of tissues has been developed on the basis of solution of a inverse problem of heat conductivity with phase changes. The kinetic models of a water exchange on freezing cells have been studied and the methods of the concentration effect control on the basis of global phase diagrams have been formulated.
