3. Beer with the use of unmalted sorghum. Development of the beer production process with partial replacement of malt by sorghum. Methods: mathematical modelling, analytical chemistry. Apparatus: extractor of semi-continious action. The structure of multi-enzyme composition for adding to the mash was stated. Rational values were defined for the parameters of beer production process with the use of sorghum.
