Multicomponent food mixtures for freezing. Development apparatus for the production of soft ice-cream. Methods: theory of heat transfer, experimental research of the heat exchange in the apparatus. Apparatus: experimental installation, reserch heat exchangers. The increase of apparatus productivity is defined due to the intensifica tion of heat transfer.
