. The thesis present the results of the researches to the crystallization of the sugary substances: for the asymmetric mechanism of recrystallization process under influence of the vapor phase on the sugar crystallization has been explained; the new methods intensifying the fructose crystallization process; the process regime for crystallization of the after-product massecuite; the scientific grounding for the application of the products recalculation in the process systems for sugar crystallization has been given for the first time; the universal model of the multi-stage industrial sugar crystallization process; the mathematical equations describing the relationships between the factors characterizing crystallization, heat exchange, recirculation and apparatus design have been obtained; the method for calculation of the sectional forward-flow-recirculation chambers for crystal growth in the in the continuous vacuum-pans has been developed; the method for sugar massecuite processing in the centrifuges has been developed.
