Object - technological processes of a long storage a grapes, apples, potatoes and vegetables; the aim - development of scientific bases creation of technological processes and optimization condition of a long storage vegetable production depending on its initial quality; methods - traditional both modern, theoretical and experimental; novelty - in development of the theory scientific substantiation ecologically clean technological processes of a long storage fruits and vegetables; results - the technology is developed, in which the optimum temperatures and concentration of carbonic gas, oxygen and nitrogen for a storage grapes and apples in refrigerators with a controllable atmosphere are established.
