Essay

The thesis is subjected to the evaluation process aimed at title of Doctor in Technical Science in the area of specialisation no.: 05.18.12, i.e.: The processes and food devices of microbiological and pharmaceutical materials. The National University of Food Technology of Ukrainian Ministry of Education and Science, Kiev, 2008. The thesis presents the analysis of complex problems in the field of energy and material during long term storage of fruit in thermal chambers at controled gaseous environment. The research results have been put into practice with a hundred-ton chamber in Radzyn Podlaski. The economical effect has been evaluated on the level of Є 2000 per year. Key words: fruit, long term storage, heat and mass transfer, insulation, thermal chamber.
