In dissertation the analysis of the modern state of methods of intensification is represented warmly- and masstransfer in relation to food and microbiological technologies. It is shown that direction of the use of transient behaviors is perspective, which the changes of thermodynamics, hydrodynamic, kinematics, power para-meters or sizes which characterize the motive factors of processes are for.
