The dissertation is devoted to creation of scientific bases of designing both improvement of processes and equipment of food and pharmaceutical productions. It will provide an opportunity of rational constructive - technological design data choice of the equipment and modes of its operation. The mathematical model construction of disperse systems behavior in food productions no equilibrium processes is offered. The thermo-mechanics boundary problem general mathematical statement of a disperse liquid saturated moving medium (analytical model) is formulated.
