Object: processes of strategic management by marketing activity of enterprises of restaurant economy (ERE). Purpose: development of theoretical-methodological, methodical and organizational principles of forming and realization of marketing strategy ERE. Methods: systems and economic analysis; sociological researches (questioning, questionnaire, supervision); cluster analysis; system-structural, comparative analysis and expert estimations; budgetary financing and optimization of marketing charges. It is offered: conceptual model of strategies ERE; conception of segmentation of users ERE; scientifically-methodical approaches of: strategic transition to the inclusive segment of healthy feed in activity ERE; forming of strategic transition to franchising and branding as the basic methods of re-formatting of business kernel ERE; market segmentation; choice of marketing strategy ERE; realization of marketing strategies; classifier of marketing charges; process of maximization of marginal profit levels of turbulence of external environment; development of type of users ERE; category-concept vehicle.
