The thesis is devoted to solving the complex problem - scientific justification of improving the quality and expanding the range of the end-use production in flour mills by creating flexible technological complexes based on the systematic analysis of the grain properties, justification of the structure and modes of the high-quality milling process and the development of structural and logical models of decision making. The technology of all purpose flour by processing soft and waxy wheat, by the improvement stage of the forming end-use products at the high-grade hard wheat milling.
