In dissertation work theoretical generalization and new decision of scientific problem is resulted in relation to the increase of efficiency of elements of technology of growing, which provides the receipt of two harvests in the ground-climatic terms of Ukraine, plants with the excellent biometrical indexes of organic direction. The degree of plasticity shows ecological adaptation the стевії sort of Bereginya at приживлюваністю plants, which is more sensible to the terms of підзони of the unsteady moistening (0,397) and less in the conditions of підзони of the sufficient moistening (0,217). Scientifically grounded and the method of drying, which provides the production of sheets dried of the assured quality, is developed. The terms of their storage are studied and influence of elements of technologies of growing and drying on quality of the prepared product is rotined. After the study of features of component composition certainly dependence of matters of дитерпенових глікозидів, flavonoids, amino acid and жирнокислотного composition is on the ground-climatic terms of Ukraine. It is got results from influence of admixtures on kinetics of extracting became basis of research of extracting of matters of дитерпенових глікозидів from sheets dried and receipt of concentrate of high quality, which is tested in the production of semihigh-calorie mayonnaise of "Steviya" and vodkas of "Steviyka".
