The Thesis is dedicated to solving of a scientific and applied problem of limitation of safe for human body flavored nutrition products industrial production in Ukraine and implementation into domestic industry new technologies of natural concentrated flavors. Usage of flavors takes place almost in all fields of food industry. The existing in Ukraine production of natural flavors is unable to meet a growing demand for safe flavored production. Majority of flavors are imported from abroad. The work allows adjusting production of domestic natural concentrated flavors and providing substitution of imported flavored production.
