The thesis is devoted to the scientific substantiation and development of semi-finished products technologies on the base of targeted use of nutrients from protein and carbohydrate dairy raw material (PCDRM) by use their co-precipitation and ultrafiltration (UF) concentration. The conditions and parameters of buttermilk proteins co-precipitation are substantiated and determined; buttermilk proteins provide a high degree of their targeted use and obtaining data buttermilk low-calcium coprecipitate with improved sensory parameters. The rational parameters and modes of the ultrafiltration concentration process of PCDRM with use of PAN-type UF membranes under dead-end mode and with system bubbling which allows providing their nutrients targeted use are determined. Physical and chemical indices complex of the protein and carbohydrate dairy raw material ultrafiltration separation products quality, proteins participation degree of various PCDRM fractions and their UF retentates in the model systems foaming formation was determined as well. Technological schemes for the production of protein and carbohydrate semi-finished products. The indices which characterize the nutritional value of the developed semi-finished products were determined. The new technologies were implemented into restaurant business enterprises of Ukraine. The economic efficiency data of new semi-finished products into production implementation are presented.
