Essay

The theoretical and methodological provisions and scientific and practical approaches to the organizational and economic principles of the dairy subcomplex development in to ensure food security of Ukraine have been substantiated. The theoretical essence of organizational and economic principles of the dairy subcomplex development is generalized. It has been deepen and supplemented theoretical and methodological approaches to determining the organizational and economic status of the dairy subcomplex as a food system, which is a set of interconnected elements, activities and participants involved in the whole chain "production-consumption", operating under the influence of environmental factors (economic, socio-cultural, political, scientific and technical, environmental and globalization) in order to meet the needs of the population in quality and safe dairy products while maintaining the economic benefits of all economic entities and achieving the strategic goal of ensuring food security. The dairy subcomplex has been proven to be of strategic importance to the country due to the volume, frequency and culture of consumption of milk and dairy products, acts as a guarantor of social stability and food security, and affects the economy, society and people by improving nutrition, creating jobs, supporting and activating the entrepreneurial component of the rural economy, providing livelihoods and making a significant contribution to achieving the sustainable development goals.
