The dissertation work is devoted to the improvement of biotechnology of processing of secondary grain raw materials into functional food ingredients - dietary synbiotic supplements. Processing of secondary products of grain processing and their transformation into products that are suitable for further use is one of the most important components of the grain processing industry. Increasing the innovation economy depends on the use of critical technologies, which include biotechnology. The development of biotechnology in various fields of production is becoming an important factor in the growth of the national economy. According to the directions of development of modern biotechnology, the priority of production is the production of pharmaceuticals, nutraceuticals and dietary supplements. The basis for the production of these organic products should be own raw materials of plant origin. A promising area for solving this problem is the use of biotechnological methods. First of all, treatment of wheat bran with enzymatic preparations of hydrolytic action for the purpose of their biotransformation and subsequent use as a nutrient medium for probiotic microorganisms.
