Dissertation is devoted to the questions of working-out the tech-nology of multi-carbohydrate containing sweeteners in the form of-syrups, which are enriched by isomaltooligosaccharides (IMOS)and are able to increase the content of health-giving microorganisms in human gut. The scheme of production of enzyme preparation for synthesis of IMOS from maltose based on intact cells of microor-ganism Aureobasidium pullulans was worked out. The process of obtaining of maltose by saccharification of starch-containing cereal raw materials with barley malt enzymes was studied. The process of conversion of maltose syrups into IMOS-enriched multicarbo-hydrate syrups was studied, the industrial technology of novel syrups production was worked-out. The ingestion of new products by rats leads to increase of bifidobacteria and lactobacilli content in gut microflora.
