The dissertation is dedicated to a problem of improvement technology of production crystalline fructose by intensification of concretion, crystallisation and centrifuging processes. With this purpose usage of surface-active agents (SAA), glycerine and intensive intermixing of massecuite is investigated, the optimisation of parameters of a crystalline seeding agent is conducted. The complex research of effect SAA both glycerine on viscosity and surface tension of fructose syrups and massecuites of miscellaneous cleanness, on processes of concretion and crystallisation, and also on quality of crystalline fructose is conducted. Is established, that the effective method of intensification process of fructose crystallisation is intermixing of massecuite with changeable speed. Is retrieved optimum parameters of a crystalline seeding agent for the two-commodity scheme of fructose crystallisation. Keywords: fructose, surface-active agent, glycerine, seeding agent.
