The dissertation is devoted to the development of the icewine technology from frozen grapes by natural and artificial ways grown in the conditions of the Northern Black Sea Coast. Based on experimental data requirements for grapes were developed, which provide the determination of the mass of grapes clusters and the mass concentration of sugars of technological mature grapes cultivated in the Northern Black Sea Coast for the icewine production. Rational temperature regimes and duration of grape freezing have been established and scientifically substantiated. The technological method of blending of must from naturally and artificially frozen grapes was tested firstly, the effective method of clarifying of the must before fermentation was determined, the preparations for stabilizing wine materials for icewines were identified. The peculiarities of the aromatic complex of domestic ice wines, which are characterized by dried fruit, citrus and nut descriptors were determined.
