Objekt: carrot and table-beet.. Aim: on the basis of using ecological and intravarietal variability of biochemical and productive sings to reveal the initial material of carrot and table-beet for the breeding on adapttivity in the forest-steppe of Ukraine condition. Methods: breeding, biochemical methods, genetic- statistical analysis. Results: the varietal peculiarities of chemical composition of fleshy carrot and common root crop beet species are revealed; the sources for breeding with high content of biochemical indices by parameters of adaptivity, stability, plasticity, breeding value of genotypes homeostatical character are singled out;; the speeded up methods of evaluation of root crops chemical compositon are imporoved and the new varieties of carrot "Yaskrava", "Bars" and table-beet "Bordo Kharkivs'kyi" are created. Sphere of introduction: breeding institutions, Genopool, agricultural enterprises of the forest-steppe of Ukraine.
