This dissertation is devoted to the elaboration of scientific-theoretical basis of ultrasonic treatment of yeast for obtaining the lysates and their use for the intensification of biotechnological proc-esses of fermentation production. The lysis of yeast cells in the field of ultrasonic waves depending on oscillation frequency, generator power, suspension concentration and volume, duration and temperature regime of treatment has been studied. The composition of lysate obtained has been investigated. The stimulating action of ultrasonic lysate on the rate of wort fermentation, alcohol accumulation and yeast biomass has been under study. The industrial testing of the elaborated technology of obtaining yeast lysate has been performed. Keywords: yeast, lysis, ultrasound, alcohol, biomass.
