Research objects: The technology for production of white table wine materials. Research objective: Improvement of the technology for production of white table wine materials based on the use of oak preparations. Methods: Conventional methods and modified physico-chemical, sensory, experimental-statistical and analytical ones. Theoretical and practical results: Chemical composition and physico-chemical characteristics of white table wine materials made by the use of oak preparations have been studied. Indices for evaluating quality of oak preparations have been established which characterize suitability of the preparations for being used in production of white table wine materials. The relationship between physico-chemical and sensory indices of white table wine materials and composition of oak preparations used for their treatment has been revealed. A protocol to evaluate oak preparations for treatment of white table wine materials has been developed. Modes and parameters of treatment of white table wine materials with oak preparations have been theoretically supported. Novelty: The interrelationship between physico-chemical indices of oak preparations and those of white table wine materials has been established and mathematically proved. The role of ellagotannin as indicator of extraction processes taking place during treatment of wine materials with oak preparations has been detected. Modes and parameters of the technology for production of white table wine materials based on the use of oak preparations as well as requirements for wine materials to be treated have been theoretically supported. Requirements for oak preparations to be used in production of white table wine materials and a protocol to evaluate the former have been developed. A method to produce white table wine based on the use of oak preparations has been developed and protected by a patent of Ukraine. Implementation degree: Industrial and acceptance trials of the technology for treatment of white table wine materials with oak preparationshave been carried out in the company Limanski (Nikolaev region) using a total of 5000 dal of wine materials. Effectiveness: The calculated economical benefit is 2020 hrn per 1000 dal of wine materials. Sphere, branch of use: wine industry.
