Object – technology of spirit brew during low temperature thermo-fermentative processing of different kinds of starch containing raw materials with usage of concentrated fermentative chemicals; methods – special analytical, chemical, physical-chemical, gas chromatography methods of researching with usage of modern instruments. Novelty – mathematical models of quantitative and qualitative determining of by-products and second fermentative products in spirit brew depending of first concentrate of dry substances wort and temperature of fermentation have determined at first. Results – branch technological regulations production of spirit brews in low-temperature cooking of starch containing raw materials with usage of concentrated fermentative chemicals ТР У 0032744-812-2002 and technological instructions for conditions of Lipnitskiy spirit factory (TI 30219014-019-2006-НТР) and SE Ivan’kivskyi spirit factory have developed.
