The dissertation is devoted to working out of the scientifically grounded technology of highly active long-term storage dried complex enzyme preparation (CEP) of b-fructofuranosidase. Fundamentally the process consists of the stage of destruction of highly concentrated suspensions by means of percussion action disintegrator ФУГ-1М, CEP of b-fructofuranosidase precipitation from disintegrate suspensions supernatant by tannin followed by its vacuum drying. To extract the enzyme it have been proposed to use the biomass of baker's yeasts cultivated on the inulin-containing aqueous topinambour's cakes extract or the commercial yeasts biomass. The optimal physical-chemical properties and catalytic parameters of the tannin precipitated CEP of b-fructofuranosidase were established. The technology of CEP of b-fructofuranosidase was tested on the "Trypolsky Biochemical Plant"; the technical-economical analysis data of the developed technology are presented.
